Pumpkin Spice, and All Things in Love

Ok….so that doesn’t rhyme, but anything with Pumpkin Spice gets our attention these days, right?  It’s “Pumpkin Spice Season!”

My daughter was wanting to make a batch of cookies tonight for her Bible class.  They’re selling them to raise funds to buy school supplies for children at a school in Honduras that our church helps support.  They had already made the usual…Chocolate Chip, Sugar, Chocolate, Almond Shortbread, and she was wanting something different.  So of course, Pumpkin Spice popped into my head and I said, “You’ve got to make some. Trust me!”  So she did and boy, did they smell delicious!  The hubs said I HAD to try just a tiny bite, so I did and sure enough…they were delish!  So I had to share the recipe here with you all.

These would be perfect for an afternoon playdate or dessert after dinner with friends.  They’re so good, you just have to share them!  Bake a batch (or two) so there’s an excuse to invite a friend or younger mom over to help eat them!  Take the initiative! Or maybe put half on a plate and deliver them to the local fire department, police station, or nursing home.

PS. Hers look much prettier! We didn’t start the recipe until after dinner, and the kids wanted some for their dessert…So we skipped the 2 hours in the fridge step.  They don’t look as pretty, but then again when does anything we make at home look as pretty as it does on Pinterest! And they still tasted wonderful! So if you’re in a hurry, that is totally an option!
